The balance of such a rich ecosystem is sensitive, especially when you need the physical action co-exist in harmony with human activity.
The life of the local residents is closely related to the lagoon. Fishing and grazing are the main field of the daily toil. The vernacular used here, reflects and defines an entire world: the world of the lagoon's fishermen.
The traditional art of fishing and boat maintenance is transmitted through the centuries from father to son.
Whether part of cooperatives or free lancers, the lagoon's fishermen are the trademark of the place.
The shallow waters, created the need for many modifications, the keel was removed from the boats, leading to a flat floor.
The fishermen huts on wooden poles are typical of the lagoon. Typical of the area and a key tool for fishing, the weirs made by poles and the renowned fish farms. Here, in contrast to the intensive fish farming, no artificial feed is provided. The rich lagoon is hyper-sufficient.

A special product registered as protected designation of origin, and exported in many countries, is the Messolonghi mullet haviar. It has been known for centuries that this lagoon produces the best roe worldwide. It comes from the gonads of the female mullet, here named "Bafa". After the processing, the roe is immersed in natural wax for maintenance reasons and it's in this form that can be found in the market.
